The Lay of the Land
INTRODUCTION
This book is about the single most important food change you need to make if you want better health, more energy, greater beauty of skin, hair, and nails, faster healing, better performance, stronger bones, higher IQ, improved brain function, better hormonal health, less eventful pregnancies, and healthier aging. 99% of you have not yet made the oil change that you need.
I hope this book inspires you to make that important, health-enhancing change sooner than later.
A MATTER OF OIL AND FAT
How often do you change the oil in your car? If you care about your vehicle, you do it on a regular basis, right? You drain out the dirty oil, and you replace it with clean oil.
When did your body last get an oil change? Your body needs an oil change just as your car does. Your body runs better on fresh, clean, healthy oils. It requires good quality air and the right fluids in the right quantities. When your body “runs better”, you’re healthier and have more energy. When you’re healthier, you have more comfort, more fun, and a longer life. I think that sounds like a good idea.
But what kind of oil change does the body need?
1981 was the year after I had been poisoned by pesticides, learned that doctors had no solution for my poisoning, realized that my health is my responsibility, and decided, given that my body is made from food, that nutrition should be the first place to look for answers.
I began to focus my attention on nutrition research in the scientific literature, reading studies on nutrition and health as well as nutrition and disease. I earned my Ph.D. in nutrition, and I wrote my thesis on fats and oils.
Learning the precise definition of “essential”, the cornerstone of nutrition’s importance and powerful effectiveness to build health and reverse and prevent disease was game changing. I explored the world of research that had been done on food fats and oils (lipids).
But there were contradictions whose resolution required me to delve into the way edible oils are processed by industry and used in food preparation in restaurants and our homes. I was shocked to learn of the damage done to edible oils. All of us were consuming these damaged oils and they were corroding our insides with diminishing return on performance just like a car engine trying to trudge along running with dirty, wrong, contaminated oil.
When your mechanic changes your car’s oil, they change other fluids and the air filter as well. It’s not just oil that needs changing. The same is true for your body. By the time we drink it, our water is old and stale after its long, arduous journey from the glacier to our taps. Our air—especially in our cities—is contaminated. To effectively clean out your system, I’m suggesting the full treatment.
Change your water and air as well.
The timing of my poisoning, which got my attention and drove my search for answers in the research literature, couldn’t have been more kismet. Altogether, these events and findings led me to conclude that I could not get healthy on damaged oils, and that oils should be made with health rather than shelf life in mind. Poisoned, I was just desperate and motivated enough to decide to develop a method for pressing oils “with health in mind”, which would prove to be a rigorous undertaking.
I’ve got good news for you. You’re the beneficiary of the motivation and learning generated by my self-tailor-made pesticide poisoning disaster.
Did you know? About ninety-eight percent of all the atoms in your body right now will have been removed and replaced by this time next year? This is great news. It is why healing is possible: By raising the standard (quality) of the foods you eat, you can rebuild about ninety-eight percent of your body to a higher standard (better health) within a single year.
All you need to do is make better food choices: more whole foods; more plant-based alkaline foods; more fresh, organic, raw, local, sun-ripe, seasonal, uncontaminated foods; fresher air; more and fresher water; and more detoxification (sweating being the safest, most effective, least valued, and most under-used detox method). This means you literally can switch out your old oil for new just like your car.
Your body is a special instrument. To make your inner motor hum, it needs special kinds of oils. We call such oils “in their natural state”, or oils “made with health in mind”. These oils are rich in essential nutrients that are vital for your life and your health. But your body cannot make them and must get them from the right kinds of foods. To build, sustain, and promote health, oils must be in their undamaged, natural state. The way nature made them is the way your health requires them.
Is your body’s oil change overdue? If you’ve not yet made the switch from damaged, toxic oils to clean, essential ones, the answer must be a resounding “Yes!”
Although it might seem daunting, I’m here to assure you that if I could make the shift away from damaged oils mortally riddled with pesticides, you can do it too. It is my pleasure to be your guide via this book!
I want you to be familiar with clean oils in their natural state, so you’ll be able to fly down life’s highway with ease. In this book, I share with you what I’ve learned in a lifetime of observation and education. It’s been my passion to discover and my blessing to have a knack for it. It’s my privilege and joy to pass on to you what I’ve found. This book was written for you—my gift from life to you—so that you can have better health and a better quality of life.
CONTEXT: HUMAN NATURE IN FOUR MAIN PARTS
Before we get into the main story of the oil change your body needs, I want to give you a broader perspective into which to fit that story. While oils are the most neglected area of physical health and therefore most important physical arena to get a grip on, they are only two of about 50 necessary building blocks for body construction, maintenance, and repair. Each of these 50 building blocks needs to be accessed and its intake optimized to support health of the body. I list and describe them in slightly more detail at the end of the book in Appendix 1, 2, and 3.
So, good oils are 2/50th of physical health. But there’s much more to health than that. All of physical health is only 1/10th of Total Health. In other words, 9/10th of Total Health is not based on the body (physical). If you want the best health and longest life, you must give each part of Total Health its due.
Six of these 10 parts of Total Health make up human nature. Three other parts of health originate in our surroundings. The tenth part, emotions, is made up of composites of the other nine parts of Total Health based in nature and human nature.
We will enlarge on the topic of Total Health closer to the end of the book. Here, like I said, I just want to briefly introduce the topic to give you a larger perspective into which your necessary oil change fits.
Human nature consists of four distinct and separable main parts. Each part has a different nature and a different function. Each part needs a different kind of attention on a regular basis. Each part goes off course in a different way and responds to a different kind of intervention.
Awareness is an undifferentiated, dimensionless, formless “container” out of which all things and humans arise, within which all things and humans unfold, and into which all things and humans eventually dissolve again.
Awareness is also the capacity to pay attention, to perceive, to notice. And awareness is also where you find being, peace, wholeness, contentment, equanimity, ‘observer’, witness, and fulfillment. Awareness is like the space (or container) within which your existence as well as the existence of the entire universe unfolds.
Awareness has two aspects. One is internal awareness. The other is infinite awareness. In truth, they’re both the same, but your access to infinite awareness is through internal awareness. You experience infinite awareness when you bring your focus into the space your body occupies, where you discover unshakeable, blissful peace as the most subtle part of being. You, like every other creature, are a center of that peace without inside or outside, which stretches from you out to infinity, not limited in any way by the physical dimensions of your physical body.
It is not likely to be a surprise, and research shows that awareness, experienced, has positive effects on health. Life is the necessary energy or power that runs all mental and physical shows. Life is the power that empowers you. In its essence, it is a fraction of solar energy which, flowing within our body space, is also called life energy. Subjectively experienced, life is also the master of your body that is also called spirit.
Life weighs nothing but its flow through your body runs everything. It empowers you and is also unconditional love for your body. It is omni-present, omni-potent, and omni-scient in your body. It is your built-in expert on how to live in your personal ‘trench’. Life, the master in your body, is also your body’s CEO, ruler, benevolent dictator, sovereign (king), and leader.
You can imagine that feeling the flow of unconditional love that powers and empowers you is beneficial to your total health. Mind consists of three arbitrarily created, learned, thought- and belief-based (symbolic; not real) programs of instructions that have distinctly different functions. The first is Inspired Mind. The second is . The third is Habitual Mind. Mind determines the directions, limitations, and outcomes of your life-powered physical journey. Depending on your mental content, mind is a gift (supportive of life) or a curse (life-hostile).
Inspired mind is the shine of life into the world. It is creativity, genius, originality, design, purpose, intention, will, and positive contribution. Its visions light up the world and, manifested in practice, raise quality of life for both you and others. Some call it ‘thrival mind.’
Protective mind, also known as survival smarts, consists of learned skills that enable you to avert or deal with crises and take necessary action while remaining calm under fire. Survival mind at its best (working with creative mind) pre-empts crises that can be anticipated, and takes care of protection, procreation, parenting (food, water, air, clothing, shelter), and basic education for successfully surviving safely in the world.
Habitual mind is all the stuff we’ve learned that is not helpful to either thriving or surviving. It’s a collection of thoughts, ideas, concepts, and beliefs we picked up that we can survive and thrive without. Like algebra. rote. Sayings. Unfounded opinions. Fantasies. Ideas out of line with reality. All thoughts and beliefs that neither help us to survive nor to thrive. All the mental clutter we no longer need (or never needed) that can interfere with the quality of our life journey. That we can let go of, and that lightens our load up when we discard.
Body is your physical vehicle for physical action. It includes the physical genetic DNA instructions for body construction, maintenance, and repair.
CAR, COMPUTER, AND BODY ARE SIMILAR
This separation of the human being into distinct parts is not applicable only to us. It also applies to cars and computers which, other than not being self-aware, are constructed similarly. Life, mind, and body of a car, a computer, or human being similarly unfold their functions.
Car: The “life” or power of the car is its fuel. The “body” of the car is its chassis, wheels, motor, etc. The “mind” of the car is the driver’s intent, which gives direction toward the intended goal by means of turning the steering wheel and appropriately pressing on the gas and brake pedals.
Computer: The “life” of a computer is its power source (battery or wall plug). The “body” of the computer is its hardware. The “mind” of the computer is its software program.
Human: Life is solar energy. Body is oxygen, water, and food. Mind is thought, memory, and belief structures that set directions for actions as well as limitations to attain specific goals and outcomes. Life makes and uses DNA genes as its blueprint for making mrNAs.
mrNAs act as templates for the construction of proteins. Proteins determine the shape and functions of bodies made from nature, food, essential nutrients (no poisons), water, and air. Every year, life removes and replaces most of the atoms in your body, making physical healing possible.

ENERGY TRUMPS MATTER
In all of creation, energy precedes matter. No one knows what was prior to the Big Bang (I think of it as a super-concentrated point of awareness), but space, energy, matter, and time began to exist only after that. Energy preceded matter. Matter appeared later, as a condensation of energy. Here are a few observations of energy preceding matter.
Solar energy touching Earth preceded the excitation of electrons on atoms (or energy of activation) that resulted in the chemical reactions that led to the development of molecules, complex molecules, microbes, plants, animals, and people.
Energy excites atoms. Atoms don’t excite themselves. Without energy, there is no chemistry. In reproduction, long before the physical embrace, there is perception and attraction; both are energy phenomena. When we say that two people have chemistry with each other, that chemistry consists of a quickening exchange of energy, which is the realm of physics, not chemistry.
The energy of life precedes and is required for the construction of physical form. Enhanced energy helps healing happen. Energy moves atoms and molecules around the body in healing activities. Atoms and molecules do not move themselves.
When you are physically sick, life can rebuild almost all your body bits to a higher standard in a year if you: raise the standard (quality) of the food, water, and air you take in, and enhance the availability of energy needed for healing.
Ensure optimum digestion with digestive enzymes, probiotics, prebiotic fiber, and certain herbs and spices. Balance action, activity, and exercise with rest, recovery, healing, and sleep.
Avoid poisons and detoxify.
WHAT ROLE DO GOOD OILS PLAY IN HEALING?
As part of food, about fifteen percent of your body weight is oils and fats. In an adult with a normal weight (70kg; 154pounds), that’s 22.5 pounds or about 10kg or oils and fats. Omega-3 and omega-6 essential fatty acids (EFAs) make up about ten percent of the weight of the wet brain (more than sixty percent of the dry brain). They make up a smaller amount of the oils and fats in most of your body’s other tissues. One of their functions in body construction, activity, and repair is that they serve as structural building blocks within cells and tissues. But they also store a lot of energy, which drives the chemistry of healing.
Water makes up about seventy percent of the weight and ninety- nine percent of the molecules of the body. Oils and fats, at fifteen percent of your weight, are the most abundant and energy-richest nutrient molecules in your body. Proteins are about ten percent.
Minerals are about four percent. Free oxygen is about one percent. Vitamins are less than one percent of your total body weight. Light, of course, is weightless. All are necessary participants in body construction, function, and repair.
Essential Fatty Acids (EFAs: omega-6 and omega-3) are the most sensitive, easily damaged building blocks. Light, oxygen, and heat, as well as water and minerals, can damage these highly sensitive oil molecules. They therefore require more protection and care than any other nutrients. Anyone with half a brain would give them that care and protection. And we do that, right? Nooooo, we don’t. We give oils containing EFAs less care and protection than we give to any other food.
Of all the nutrients from foods, the oils you use in your foods have been most harshly treated, are most destructively used, and have thereby become the most toxic foods. The oil change that your body needs, from damaged oils to good oils made with health in mind, enables profound improvements in physical health to take place.
Within a matter of two years, healthy oils can replace most of the damaged oils in your body. That change improves your health. Additionally, good oils remove oil-soluble toxins from your body through your lymphatic system, and through your skin when you sweat.
In other words, a total oil change is possible!
BLOCKS AND INTERFERENCE
Life and its DNA can only create physical health if you live in line with your nature and the natural system within which, and as an adaptation for living within it, life developed this genetic program. Living in line with nature consists of exposing your skin to natural light, breathing fresh air, drinking fresh water, and eating fresh, whole, raw, organic, local, seasonal, mostly plant-based foods.
You’re healthiest when you do that, unless the foods are contaminated by disease-carrying microbes, in which case you must wash and cook the food to kill the pathogenic microbes. If your foods contain unnatural, toxic, industrial chemicals, that’s more difficult to know and still more difficult and slow to clean up.
Life did not make DNA or mechanisms to remove, break down, or otherwise neutralize molecules that never existed in nature. Such “foreign” molecules can interfere with health when they get into your body. Molecules foreign to nature often have toxic, poisonous, negative effects on health. Why do pharma-made synthetic drugs have so many unintended toxic side effects? Because they are unnatural. To be patentable, they must be unnatural. In addition, the detox mechanisms that life (nature) developed in your body can sometimes work against you. Some unnatural toxic molecules become even more toxic in life’s attempt to detoxify them in your liver. So, avoid unnatural molecules as much as you can.
TOXINS
Industry developed unnatural, synthetic molecules only recently.
They include:
Pesticides, made with the sole purpose of interfering with biological processes and thereby killing creatures.
Plastics, for which life made no breakdown methods, and which,when they get in your body, can lead to low-grade, chronic,systemic inflammation as your immune system tries in vain to break down or neutralize them.
Pharmaceutical drugs, many of which have toxic side effects because they are not natural and merely suppress symptoms without curing illnesses. No illness has ever resulted from a deficiency of any pharmaceutical drug.
Industrial chemicals, thousands of which are dangerous to delicate natural cells and tissues; last time I checked, there were about 84,000 such chemicals.
Household chemicals, which, with powerful toxicity, have warnings to keep them out of the reach of children. They’re toxic to adults, too.
Beauty products & cosmetics, many of which contain unnatural toxic molecules that persist for many years in your environment; they don’t belong on your skin because they’re absorbed into your body; and there are few regulations regarding their use and side effects.
Food additives & preservatives, which prevent bacteria from living on and rotting foods, also therefore keeping foods artificially “fresh” longer than normal.
Damaged food molecules, which your body recognizes as foreign, but may not know how to get rid of, produced by industrial food processing and by restaurant or in-home food preparation.
Toxic metals, which are concentrated by industry and include lead, cadmium, arsenic, aluminum, and mercury, have many health-damaging properties.
Radiation, whose power from atomic bombs, reactors, powervlines, towers, and X-rays can wreak havoc on delicate moleculesvand the bonds between their atoms in your body.
Radioactive elements, like cesium, strontium, iodine, and plutonium, whose powerful gamma rays damage DNA, break molecules into fragments, create chaos in your cells, and can cause mutations, cancer, and birth defects.
Excess of some molecules also interferes with the conversion of vital omega-3 into useful omega-3 derivatives. This includes the presence of too many molecules of the omega-6 essential fatty (linoleic) acid, omega-9 monounsaturated fatty acids, saturated fatty acids, trans- fatty acids, starches, and sugars.
Deficiency of atoms or molecules that promote conversion of vital omega-3 into useful omega-3 derivatives, including the minerals magnesium and zinc; and vitamins B3, B6, and C.
Optimize intake of essential nutrients that promote conversion. Minimize your intake of factors that interfere.
THE ‘COMPLAINTS ABOUT OILS’ DEPARTMENT
Every few years, someone comes out with the same ‘new’ expose on the dangers that industrial (seed) oils or omega-6 pose to our health. Dozens of such ‘complainer’ books have been written by different authors over the past 40 years. Books on the subject have been published on every continent.
Some have written based on agendas supported by an arm of the animal foods industry, or the mega oil industry, or the fish oil industry, or stable fats-containing product providers, or plant-based food promoters, or some other agenda. Some do it just because bad news, negativity, and fear mongering get your attention.
I’m always amused how vociferously they complain and how consistently they offer no truly healthier alternative. We did that almost 40 years ago, by
Looking deeply into the biochemical research on oils,
Understanding the vulnerabilities of the essential nutrients that come from oils,
Investigating the damage that industry does to sensitive oils that they make with shelf life rather than health as their goal,
Investigating the damage that cooking and frying foods does to sensitive oils,
Developing machinery that keeps good, sensitive oils intact, undamaged, non-toxic, and health-supportive, and
By doing all that, creating an industry of making oils with health in mind.
Why have the ‘complainers about oils’ not directed you to something better? Two possible reasons. One is that they’ve twisted facts deliberately to lead you to products or agendas from which they profit. The other reason, which I believe to be the most common, is because they have not done the necessary homework. They have failed to look deeply enough into the topic. This leads them to put blame in the wrong place. And it also makes them unable to offer better alternative options.
They get attention. But nothing gets better. We live in a time where a lot needs to be done to make life better. Everywhere. Around the globe. Nature. Creatures. Fellow humans. Pollution. Toxins. Tyranny. Meanness. Judgment. Ungrounded conclusions. Unfounded opinions. Social exclusion.
Where are the solutions? That is what, as human beings, we are responsible for. Each for a small, personal part of it all. Responsible. The freedom to complain comes with the responsibility to find solutions. These people are too lazy to do the responsible part of the equation.
In counseling psychology, one of my professors pointed out to the class that when someone complains, it means that they know higher standards, but they want others to do the work to build them. This is not only true in therapy. It is also true in all areas of daily human existence.
Part of my reason for writing this book is to remind folks in a time of great promotion of confusion, that about 40 years ago, we looked deeply into the how edible oils affect health and what the problems are. And then we created an industry that provides a practical solution for people: Oils made and used with health in mind.
It takes a lot more effort to make things right than to just complain about what is wrong. The complainers monger fear and confusion in people’s minds and then leave. That’s it. If they are clear about the problem, why aren’t they clear about and provide a solution?
Omega-6 is not a problem. Omega-6 is an essential nutrient you must have for health but can’t make in your body from anything else. Then why is omega-6 a problem? What are they missing or leaving out? Every chance you get, ask them!!
There was even a crackpot—recently passed away—who for decades claimed that omega-6 and omega-3 are not essential nutrients at all. He claimed that if you get enough B vitamins into your body, you don’t need ANY omega-6 or omega-3 in your diet. By now, there are thousands of peer-reviewed published studies that disagree with his unsupported opinion.
Extremists get attention by creating threats in your mind. Yelling ‘Fire!’ in a theatre gets attention. But it is stupid attention if the fire is elsewhere. Have you noticed that the extremists are NOT the ones that get you out of burning buildings? That would be the responsible thing to do, but they leave THAT to others.
They are ‘Don’t!’-ers. They scare you with the bad, but they don’t give you a positive to go to. They may be right about what is wrong, but by being silent, they are wrong about what is right. They haven’t done the homework necessary to lead you to something better. It can become quite annoying. Don’t listen to them. Listen for solutions.
From worst to best, from laziest to most industrious, here is my list of a progression of increasing value of communicators. Listen and watch for fixers and solvers.
Misinformers (deliberate liars) < Complainers < Confusers <
Hear-say repeaters < Guessers < Clarifiers < Fixers (solvers).

TEN OIL COMMANDMENTS FOR HEALTH
Let me spell it out for you. Here is a list of DO commandments, each with a reason why, and each followed by a DON’T commandment for a well-oiled life. I’ll remind you of the list at the end of the book. Between these lists, we will talk about helpful research and observations for living in the contradictory, confusing world of oils.
01. DO buy oils packaged in dark glass. Glass is solid and nothing in glass drifts into oils. DON’T buy oils in plastic. Why not? Oils swell plastics, and plastics ingredients drift into oils faster than they drift into water. Plastics don’t belong in the body and when they get in, are associated with increased inflammation and risk of cancer.
02. DO buy oils packaged in dark glass, preferably in a box. DON’T buy oils in clear glass bottles. Why not? Light photons pass through clear glass and can extensively damage even good oils made with health in mind.
03. DO buy refrigerated or frozen oils. DON’T buy oils off the shelf. Why not? Lower temperature keeps oils fresh longer. The best oils are the ones most sensitive to damage done by light, oxygen, and heat. Low temperature is vital protection for these vitally important fresh oils.
04. DO buy unrefined oils made with health in mind. DON’T buy colorless, odorless, tasteless oils. Why not? These oils have been treated with harsh chemicals, bleached, and heated to frying temperature. The processing damages them. If 1% damaged, one tablespoon of such an oil contains 60 quintillion (60,000,000,000,000,000,000) damaged molecules, which is more than 1 million damaged molecules for every one of your body’s 60 trillion cells.
05. DO buy oils pressed from organically grown seeds and nuts. DON’T buy oils that are not organic. Why not? Non-organic oils contain pesticides whose only purpose is to kill living creatures by poisoning their energy production or their nervous system.
06. DO buy pressed and filtered but not further processed organic oils. DON’T buy rBD (refined, bleached, deodorized) oils. Why not? These oils are partially damaged, have minor ingredients important to health removed, and lack the antioxidant and anti-inflammatory molecules that keep them from causing free radical tissue damage in your body.
07. DO buy oils made with health in mind that are refrigerated in factory, store, and home. Even shipped refrigerated if more than 2 weeks in transit. The more care they get, the better care they take of you. DON’T buy unrefrigerated oils. Why not? Unrefrigerated, fresh oils can lose a lot of their freshness in the factory, the store, in transit, and in the home.
08. DO buy oil blends deliberately chosen for their essential fatty acid ratio and their minor ingredients with major benefits. DON’T buy single oils. Why not? There is no single oil that is optimally balanced in its essential fatty ratio. Not flax. Not hemp. Not clary sage. Not sacha inchi. Not ahi flower.
09. DO buy oils deliberately and optimally balanced in the most effective ratio (2 :1) of omega-3 to omega-6. DON’T buy oils either too rich in omega-6 or omega-3. Why not? Imbalanced, the two essential fatty acids can crowd each other out. Flax oils, too rich in omega-3 and too low in omega-6, can make you omega-6 deficient (dry eyes, skipped heartbeats, arthritis-like pain in finger joints, thin, papery skin). Most other oils contain too much omega-6 and too little omega-3.
10. DO eat oils mixed in foods and spread your intake out over the course of the day. DON’T eat oils off a spoon. Why not? Oils belong in foods. Always. They are compatible with all foods: vegetables, proteins, fruit, starches, herbs, and spices. Be careful, though. Lower your carbohydrate intake as you increase your intake of good oils made with health in mind.
11. DO always eat good oils made with health in mind mixed in foods. DON’T eat oils on an empty stomach. Why not? Your liver must metabolize the oils you eat. If you eat more than your liver can handle, you may soon feel tired, heavy, or nauseous.
12. DO use oils in cold, warm, and hot foods, but only after the foods come off the heat source. DON’T use oils and fats for frying. Don’t fry at all. Why not? Frying, the most damaging way to treat foods that we have ever invented, damages oils and fats by the simultaneously damaging effects of light, oxygen, and heat.
13. DO expect oils to have a slippery feel and oily taste. Mix them in foods. In foods, the oily taste disappears, and they enhance flavors and improve the absorption of oil-soluble nutrients. DON’T expect oils to taste like ice cream. Why not? They never will.
14. DO buy good oils to add to foods. Don’t just rely on seeds, nuts, and beans. DON’T just buy good oils. Why not? Whole foods are super-important for health. Eat seeds, nuts, and beans in addition to using good oils made from them.
15. DO include good oils in your foods. DON’T rely just on whole foods to optimize your oil intake. Why not? You may not get enough oil for optimum health (soft, smooth, velvety skin is the easy measure of optimum intake of the right kinds of oils) from foods alone. Some people might, but most people, including me, don’t get enough oil from just whole seeds and nuts.
16. DO qualify your sources of information on this important but confusing topic. DON’T believe everything you hear or read about oils. Why not? More than ever, people lie to serve hidden agendas. Freedom of speech allows people to have and express unfounded opinions. You can become the victim of the opinions of (lazy?) people who have not done their homework, have not looked deeply enough into the topic, have not mastered what they go on about, and may have hidden agendas behind their pronouncements. On every topic, there are people with integrity who tell it straight.
Find those people. Learn from them. Improve your life.
